This recipe was chosen expressly to do something different with salmon. In the last couple of years, I have often added fruit (rather than vegetables) to my meat/fish dishes. Sweet and juicy pineapple, and also the tarragon, have just the right intensity of flavors to complement but not overpower the delicate salmon.
