Seriously delicious and simple, this One-Pan Scrumptious Creamy Chicken & Mushrooms recipe has proven to be a family favorite comfort-food dish over the last two decades. Everyone in my family, including small children, enjoyed it countless times. It has been a hit every time!

Creamy chicken & Portobello mushrooms

Actually, I wasn’t going to include this recipe on my website because I didn’t consider it to be special enough for my followers. Nevertheless, my family insisted that others might really enjoy it as well.  So, here you go!

This is a classic combination of sautéed chicken and mushrooms in a creamy garlic-infused sauce. It has become a weeknight dinner favorite everyone craves. Due to persistent family demand, this recipe has been retried so many times that I’m confident it will please yours, too 😊!

A simple concept of this One-Pan Scrumptious Creamy Chicken & Mushrooms recipe allows you to cook it during weekdays. All you need is fresh or defrosted chicken plus your favorite mushrooms.

What skillet to use?

You could use any skillet you have available. Non-stick, cast-iron or stainless-steel skillets will work fine. I usually use a 12-inch non-stick for this recipe.

Regardless of what you choose to use, make sure it’s large enough to have a sufficient surface area to accommodate both chicken thighs and mushrooms in one pan. If 10-inch is all you have, reduce the portion or use 2 skillets – one for the chicken and another for the mushrooms. You can combine the cooked chicken and mushrooms at the very end.

Choose your chicken

This recipe is extremely versatile. I recommend using boneless & skinless chicken thighs for their juiciness and tenderness. It’s just my personal preference. However, you can use bone-in and/or skin-on chicken thighs, breasts or complete legs. If you use chicken breasts, I would suggest cutting them into halves, thickness-wise (like you are butterflying them).  

Choose your mushrooms

I used Portobello mushrooms for this version of the recipe. However, you can use any kind of fresh mushrooms. White button, Cremini, Shiitake are all delicious and hearty options.

Serving

Serving size for this recipe is two pieces of boneless & skinless chicken thighs plus mushrooms and some greens. Nutrition value is calculated based on this size.

In my family, I would serve a single piece for myself and 2-3 pieces for my men.  Allow 2 pieces per person, on average.

If you are a weight watcher, serve this chicken with a salad made from fresh greens (lower carb option).

For an ultimate comfort, serve it over rice, couscous, mashed potatoes or noodles. You can also soak up a piece of fresh bread in the creamy sauce. Yum!

Ingredients

  • 6-7 6-7 Boneless & skinless chicken thighs

  • 3 cup 3 Portobello mushrooms (caps), sliced

  • 1/2 cup 1/2 Carrots, sliced

  • 1/3 cup 1/3 Onion, sliced

  • 1.5 cup 1.5 Bell pepper, sliced

  • 1/2 cup 1/2 Low fat sour cream

  • 1 tsp 1 Garlic, minced

  • 2 tbsp 2 Blanched almonds

  • 6-8 sprig 6-8 Fresh parsley

  • 1/2 tsp 1/2 Italian seasoning mix

  • Freshly ground black pepper to taste

  • Kosher salt to taste

Directions

  • Prepare the ingredients.ingredients
  • Pat the chicken thighs dry with a paper towel. Rub the Portobello mushrooms caps with a paper towel and slice them into 1-inch thick pieces. Slice carrots, bell peppers and onion. Mince garlic.Portobello mushrooms
  • Heat olive oil in a large skillet over medium-high heat. Add chicken thighs, carrots and onion. chicken in a pan
  • Sear chicken for 5 minutes on each side. Season with salt, pepper and Italian seasoning mix.seared chicken
  • Reduce the heat to medium, add sliced mushrooms and cook for 3 minutes, stirring from time to time.add sliced mushroomssscied mushrooms cooked
  • Reduce the heat to medium low, add sour cream and simmer for 2 minutes until chicken and mushrooms are coted in the thickened creamy sauce, stirring continuously.add sour cream
  • At the very end, add minced garlic and turn the heat down.creamy sauce
  • Gently arrange your Creamy Chicken & Mushrooms in the serving bowls. Top with sliced bell peppers and garnish with a few sprigs of fresh parsley and blanched almonds.serve chicken and mushrooms

Notes

  • You can use 10% half-and-half cream instead of sour cream.
  • Keep leftovers refrigerated up to 3 days.
