Baby Kale and Blackberry Salad

I created and photographed this simple Baby Kale and Blackberry Salad while being at the cottage in mid-August. Regrettably, I didn’t have a chance to publish it right away. Now, that I am thinking about it, this salad doesn’t have to be branded as a summer salad. It will be perfect for any season as all the components are available all year round.

Effortless, yet elegant and nutritious, this Baby Kale and Blackberry Salad has just a few ingredients and requires no more than 3 minutes to prepare. Tender baby kale, juicy jumbo blackberries, crunchy sugar snap peas and nutty Grana Padano cheese create such a pleasant balance of sweet and savory. Easy enough to throw together but also seriously flavorful and pretty, this salad became my new fave!

Baby kale is a star in this salad. It tastes nothing like its mature counterpart. It’s more tender and has a peppery flavour similar to arugula. I used pre-washed and ready to serve baby kale which requires no time to handle. However, you could certainly substitute regular mature kale. Just chop and massage it lightly to tenderize the leaves. Arugula or baby spinach would work well, too. 

You can pair this salad with any protein-based main dish or serve on its own as a light lunch. You can add some fresh bread on the side drizzled with olive oil and garnished with grated Grana Padano cheese.

Is baby kale more nutritious than its mature counterpart?

Effortless, yet elegant and nutritious, this Baby Kale and Blackberry Salad has just 4 main ingredients and requires 3 minutes to prepare.

Ingredients

  • 3 cup 3 Baby kale

  • 1/2 cup 1/2 Blackberry

  • 3/4 cup 3/4 Sugar snap peas

  • 1/4 cup 1/4 Grana Padano cheese, grated

  • 1 tbsp 1 Extra virgin olive oil

  • 1 tsp 1 White balsamic vinegar

  • Freshly ground black pepper to taste (optional)

Directions

  • To assemble the salad, transfer the baby kale to a platter or individual plates and top with sweet sugar snap peas and blackberries. For an enhanced aesthetic, crack some pea pods open and include a few whole. Remove the tender peas from some other pods and sprinkle the loose peas randomly over the kale. Garnish with grated or shaved Grana Padano cheese. Drizzle with extra virgin olive oil and a splash of white balsamic vinegar. Don’t toss. If desired, season with freshly ground black pepper. Notes

  • To make this salad vegetarian/vegan, substitute vegetarian-friendly cheese or vegan “Parmesan” cheese for Grana Padano cheese
