Steel Cut Oats with Berries & Choice of Fruit

Do you need an easy recipe for a minimally-processed and nutritious breakfast? A bowl of creamy and earthy steel cut oats with berries and choice of fruit can serve your appetite. No overnight soaking is required. Steel cut oats are one of the healthiest dense grains that contain more fiber than their counterparts. The health benefits that are sure to make this oatmeal live up to claims of your breakfast being “the most important meal of the day” include being high in dietary fiber and protein, gluten free and having a low glycemic index.

What is the difference between steel cut oats and rolled oats? Steel cut oats, also known as pinhead oats or Irish oats, are the least processed form of oat grains. Steel cut oatmeal is produced when a full oat groat is chopped into smaller pieces with large steel blades. This leaves much of the bran intact. In contrast, rolled oats and instant oatmeal are made by flattening whole oats as per healthyeating. Rolled oats are partially cooked due to steaming and require less prep time.

Because all types of plain oatmeal are made from whole oats, they are similar in protein, carbohydrate, and fat content. However, steel cut oats have coarser texture and a slightly nutty taste.

In this recipe, I use whole grain, gluten free steel cut oats by Bob’s Red Mill. I am also offering my favorite combinations of 4 toppings. Alternatively, you can choose any other fresh or dried fruit / berries according to your whim.

A nutritious creamy steel-cut oatmeal with an irresistibly rich taste, earthy feel, nutty flavor and toppings that are easily customizable according to your preferences.

Ingredients

  • Oats
  • 1 cup 1 Steel cut oats

  • 1 cup 1 Milk 2%

  • 2 cup 2 Water

  • 4 tbsp 4 butter

  • 1/2 tsp 1/2 Salt

  • 1 tbsp 1 Sugar

  • Fruit & Berries
  • 1/3 cup 1/3 Blueberries & Almonds

  • 1/3 cup 1/3 Raspberries & Blackberries

  • 1/3 cup 1/3 Strawberries & Kiwi

  • 1/3 cup 1/3 Banana, Pecan, dried Golden berries & brown sugar

Directions

  • I use whole grain/gluten free steel cut oats by Bob’s Red Mill.
  • Combine oats and water in a medium saucepan. Bring to a boil and then reduce heat to low. Simmer uncovered for 15 minutes, stirring occasionally.
  • Add milk, salt and sugar and continue simmering for another 10 minutes, stirring from time to time to prevent scorching and sticking to the bottom of your saucepan. At the end, the oatmeal should become very thick, creamy and tender.
  • Let the oatmeal rest for a minute or two. Divide among serving bowls, add toppings and a pat of butter in the center. Serve immediately.

Notes

  • If desired, you might serve with a teaspoon of brown sugar or maple syrup and a splash of cream over the top.
  • Leftover steel cut oatmeal can be refrigerated for up to 5 days. Reheat in the microwave with a splash of milk, cream (e.g. half & half) or water.
