Watermelon Salad with Feta and Passion Fruit

This watermelon salad is one of the most refreshing salads for Summer that I have ever experienced. The inspiration for this salad came from the delectable menus served during a “trip-of-a-lifetime” excursion to an eco-resort in Costa Rica. Perhaps I will tell you more about that in another post. But first, a general word about my salads.

Here it is: my salads contain very few ingredients. This lets us appreciate the unique flavor of each ingredient. Too many ingredients are just a taste competition. I select ingredients to complement one another. I think about contrast in flavor, color, and shape. For example, this watermelon salad you are about to review combines cubed pink watermelon with long slices of black olives. Who’d have thought, eh? Creating a salad is sometimes more artistic assembly than preparation. In my view, every meal served should trigger the anticipation of taste. I really hope these appeal! Bon appetit!

A healthy and refreshing Summer salad with an unusual contrast in flavors – sweet and savory. Juicy watermelon combined with feta cheese and olives, tossed with passion fruit sauce.

Ingredients

  • 700 grams 700 Watermelon, cubed

  • 120 grams 120 Feta cheese, cubed

  • 5 5 pitted black olives, sliced

  • 2 2 passion fruit

  • 1 tsp 1 sugar

  • 2 tbsp 2 water

Directions

  • Salad
  • Prepare the ingredients
  • Cut watermelon into bite-size cubes (not too big, especially if young children will be indulging along with you) and place on a platter
  • Cut feta cheese into similar size cubes (or perhaps slightly smaller if you want more contrast – your choice!) and place atop the watermelon
  • Add pitted and sliced black olives. I sliced them lengthwise, but you could slice them across if you would prefer the look of ‘rings’ to contrast the cubes of watermelon and feta
  • Passion Fruit Sauce
  • Combine pulp of 1.5 passion fruit, 1 tsp sugar & 2 tbsp water in a small saucepan and bring it to boil, stirring until sugar dissolves.
  • Decrease the heat to medium-low and simmer for 1 minute until thickened. Allow to cool for 1 minute.
  • Stir in the remaining raw pulp of 1/2 passion fruit
  • Spoon or drizzle the sauce over salad … How easy was that?!

Notes

  • Okay, perhaps I stretched the principle of minimal processing with the passion fruit sauce. But, it only takes 3 minutes. It’s definitely worth the extra effort and you will feel like you upped your game! Don’t forget to take off your chef’s hat before you sit down to eat!
